Curried Brussel Sprouts



Whenever the vegetable brussel sprouts is mentioned I see a change in expression of many people...the expression is not a happy one :(  I have created this unique and wonderful dish that makes the brussel spouts absolutely delicious!

It is tangy and spicy dry curry with oven roasted brussel sprouts in it. Enjoy this dry curry with roti or parathas (Indian breads)


Ingredients
3 tbsp oil
1 pound of fresh or frozen brussel sprouts, cut in half if they are too big.
1 cup sliced onions
1 tsp ginger (adrak) paste
salt to taste
1 cup diced tomatoes or 1 15 oz can.
2 tsp coriander (dhania) powder
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
1/4 tsp garam masala powder

For The Garnish


3 tbsp chopped coriander (dhania)


Method


Preheat oven to 375 degrees F. Spray the brussel sprouts with PAM. Roast in the oven till golden brown, but still moist. Remove from the oven and keep aside.


Heat oil in a pan, add the onions, green chillies and ginger paste and saute on a slow flame till onions turn golden brown in colour.


Add the salt and tomato puree and saute till the oil separates.


Add the coriander powder, chilli powder, turmeric powder, garam masala and mix well and cook on a medium flame for another 3 to 5 minutes.


Add the roasted brussels sprouts and mix well and simmer for 5 to 7 minutes.


Serve hot garnished with coriander.

Both my kids (specially my daughter) think its YUMMMMMMY!
