Edamame & Broccoli Rice Bowl

Whisk together 1 Tbs. chunky natural peanut butter, 2 Tbs. 100% pineapple/orange juice, 1 Tbs. water, and 1 tsp. low-sodium soy sauce. Toss with 2 cups broccoli florets and 1/2 cup shelled edamame; sauté 8 minutes. Serve over 1/2 cup cooked brown rice.

Super fast and delicious!! The textures are awesome!! The kids enjoyed it!
