Apple cinnamon chimichangas


I recently bought a pack of apples and they were not the best to snack on :( As they sat on the counter top they got more and more unappetizing. Welllll, I had to do something with them. I found this fantastic recipe and tried it for a fun after school snack. My kids loved it!!

 Peel and chop up 2 -3 apples and simmer them in a pan with 2 - 3 tbps of sugar. Within a few minutes the apples with sweat and the with the sugar become coated with sugary syrup! Yum!


Next brush one side of the tortilla with olive oil or grape seed oil.

 
Dip the brushed side in a plate with cinnamon and sugar mixed well. The side facing you gets smeared with one tbsp. of plain cream cheese. Place a couple of tbsp. of the apple mixture and roll up like a burritos. Bake at 375 degrees for 10 minutes or until golden and crispy. Cut at an angle and serve warm!
 
The kids could not stop eating these!! Try them with any kind of fruit or berry!
