Roasted vegetable enchiladas

Roasting vegetables intensifies their flavor and is perfect in this easy and yummy entrée! Enjoy!

 
Start by roasting vegetables that you love.
 
 
 
Add some chipotle peppers in adobe sauce. Its available in little cans at any local grocery store. This adds a smokey flavor to any dish. A little bit goes a long way!
 
 
Mix the roasted vegetables with corn and black beans.
 
 
Wrap the vegetable mixture in corn tortillas and
drizzle with your favorite salsa Verde from a bottle or by all means make your own! Sprinkle with cheese and bake at 375 degrees for 15 to 20 minutes until the cheese is all melty and ooey gooey! Yummy!
