Zucchini and baby Bella mushroom tacos with avocados

Roasted vegetables make fine fillings for a fun filled " make your own" taco night! Try to substitute any of these vegetables with squash, potato, bell peppers or corn.



10 baby Bella mushrooms, stemmed and sliced into thick slices.
2 zucchini, cut into thick sticks.
1 red onion halved and sliced.
2 tsp. dried oregano.
2 tbsp olive oil.
Coarse salt and freshly ground pepper.
10 corn tortillas.
1 cup shredded Monterey Jack cheese.
2 avocados sliced.

Preheat oven to 425 ° On a rimmed baking sheet toss mushrooms, zucchini and onions with olive oil, oregano and season with salt and pepper. 
 
Roast, tossing occasionally, until veggies are browned, about 20 minutes.
Using tongs, hold each tortilla directly over the flame, turning, until heated through.

 
To serve have your guests or kids fill their own tortilla with veggie mixture, shredded cheese and avocados.
Eat warm with a dollop of Greek yogurt or sour cream and pickled jalapeƱos.
