Fun kids lunches - Day 1 (Pinwheels)


I am on a mission! I am hear to help with the biggest dilemma of all time!! What should I pack in my kids lunch box today? Something that is fun, healthy and substantial. After several days of research and planning....here is what I have come up with.  Over the next several days you will see some ideas. Please feel free to comment and also give your input. The more ideas we have the easier weekday mornings are going to be!


 
 
We went apple picking this weekend and I was able to pick some of the yummiest apples! They really don't get any fresher than right off the tree! So we had Gala apples with organic peanut butter, popcorn, milk, and two types of pinwheels....Pesto pinwheels and Nutella pinwheels!
 
INGREDIENTS for the pinwheels:

4oz (half of 8-oz package) cream cheese, softened.

1/2 cup home-made or store bought pesto.

or

3 tablespoons of Nutella.

1can (8 oz) Pillsbury® refrigerated crescent dinner rolls.

DIRECTIONS:
Heat oven to 375°F. In small bowl, mix all ingredients except dough until well blended; set aside.
Unroll dough; separate into 2 long rectangles. Place 1 rectangle on long cutting board; press perforations to seal. Place 1 rectangle on long cutting board. Spread half of cream cheese mixture on dough rectangle to within 1/2 inch of edges. Spread pesto over it. Or spread Nutella over the dough, within 1/2 inch of edge. Starting with one long side, roll up rectangle; press seam to seal. Cut roll into 16 slices; place slices, cut side down, on ungreased cookie sheet. Repeat with remaining dough rectangle.
Bake 14 to 16 minutes or until light golden brown. Immediately remove from cookie sheet. Serve warm.

The nutella pinwheels were such a big hit at our house and not only kids, but all the adults loved it and I had to keep making more.
