Kids lunch - Day 2 (Peanut butter sushi rolls)

Kids lunch ideas...continued!
Skip the same ol' sandwiches and upgrade to these outside-the-lunch-box surprises. Your kids' faces will light up when they see that you've taken lunch to the next level.



Today we are packing fresh, juicy red grapes, choocolate pudding, mild cheddar cheese stick and peanut butter and jelly sushi rolls!
 
2 tablespoons creamy peanut butter
2 tablespoons jam (pick your favorite) or 2 tablespoons jelly (pick your favorite) or 2 tablespoons preserves (pick your favorite)

2 slices bread
Directions:
Remove crusts from bread. With a rolling pin or large soup can, completely flatten bread.
Spread 1 tablespoon of peanut butter and 1 tablespoon of fruit spread on each slice of bread.

Roll each slice into a tight spiral. I put the whole rolls in the fridge overnight at this point and sliced in the morning. They were much easier to slice cold. Cut each spiral into 4 pieces.
