Mixed vegetable curry with "Gila" masala


Heat up two cups of fresh or frozen and thawed "Gila" masala. Add vegetables like eggplant, potato, zucchini, cauliflower. Cook till the vegetables are soft. Add 2 tbsp of cashew paste, 1 tbsp of coriander powder, 1 tsp chilli powder, salt and turmeric. Cover and cook for 10 minutes! Garnish with corinder leaves and serve hot with rice, roti or naan.
