Thai pani puri

 


Thai style pani puri! Extremely innovative way of serving Thai curry! This combines flavors of two of my favorite dishes! Absolute must try to wow your friends!

Ingredients


For Thai Pani Puri
30 readymade puris
1 can coconut milk
2 tbsp thai red curry paste
1 tbsp chopped thai basil

1 lime zest and 1/2 lime juiced
2 tbsp butter
3 cups finely chopped mixed vegetables (any combination of onions, cabbage, carrot, capsicum and baby corn)
1 1/2 tbsp finely chopped green chillies
1 tsp ginger paste
1 tsp garlic paste
salt to taste

For The Garnish
1/4 cup finely chopped spring onions whites and greens

Method


For thai pani puri

  1. To make the "pani" combine the coconut milk powder and curry paste in a deep bowl and mix well using a whisk till no lumps remain. Bring to a quick boil, add the lime juice, zest and thai basil leaves. 
  2. Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté on a medium flame for 5 minutes.
  3. Add the green chillies, ginger paste and garlic paste and sauté on a medium flame for 1 minute.
  4. Just before serving, re-heat the stuffing till warm. Make a hole in the centre of each puri using your thumb.
  5. Fill each puri with approx. 2 tsp of the stuffing and top with the thai curry sauce!
  6. Serve immediately.
