Aloo Parathas (Indian flatbread stuffed with spice potato mixture)

I unexpectedly got 2 weeks vacation with my kids just before they go back to school! Woo Hoo! I have been spending a lot of time with them playing games and at the pool, but have also been cooking with them! My daughter suggested that we have parathas for lunch! Aloo Paratha is one of the most popular breakfast dishes throughout western, central and northern regions of India. Aloo (potato) stuffed Parathas are basically unleavened dough stuffed with a spiced mixture of mashed potato, which is rolled out and cooked on a hot tava with butter or ghee. Usually butter or pickle is served with Aloo Paratha and in rural parts of northern and western India, dahi or plain yogurt is served along with it. This paratha is also very popular in my house!
 
 
4 or 5 potatoes boiled and mashed
1 onion chopped finely (optional)
1 green chili chopped finely
Half tsp chili powder (optional)
1 tsp amchur/dry mango powder
salt
ghee
a few coriander leaves chopped finely (optional)
Basic dough made from whole wheat flour.
 

Firstly, boil the potatoes and peel them. Grate the potatoes and add all the spice powders, green chillies and salt.

Dust the board with wheat flour. Take well kneaded dough made from wheat flour. Take two medium sized balls from the dough and roll these into a circle of about 3 or 3.5 inches.
 
Take a portion of the aloo mixture and spread it on one of the rolled dough. 
Press the edges of both the rolled dough firmly. Apply some dry flour and roll into a disc of about 8 inches or about the size of a normal roti or chapati.
 


Now put the rolled aloo parantha on a hot griddle.
 

Fry the aloo paratha with ghee as you would usually fry the parathas.
 

You could even serve the aloo paratha… hot… direct from the tava with white butter or curd or mango pickle.
 

To the aloos, you can also add other boiled and mashed veggies like peas, carrot, french beans, also grated cheese and paneer, to make it more nutritious and you have your mix veg paratha.
